If it's specifically YouTube keeping you up and the rest of your phone is fine, blocking just that app for the night is simpler than blocking everything.

One nightly routine, just for YouTube

Select YouTube on its own and set the start time to whenever you actually want to stop, and the end time to whenever you get up. The routine begins the session automatically, so there is nothing to close once you're already in bed.
